Our Kairi Mirchi Pickle is lovingly handcrafted by 65-year-old Anuradha Tillu, a retired Navy officer with an enduring passion for authentic Indian pickles. Combining her heritage with culinary precision, she prepares each batch with care and reverence. Fresh raw mangoes and green chillies are finely cut and sun-cured to retain their natural tang and heat. They are then blended with a robust mix of traditional spices: turmeric, red chili powder, coarsely ground mustard and fenugreek seeds, fennel, coriander, asafoetida (hing), and niger seeds—all perfectly balanced with Saindhav salt to enhance flavor and preserve naturally. Finally, everything is immersed in wooden-pressed groundnut oil, which acts as both a flavor carrier and natural preservative.
