“Indulge in the festive spirit with our Shankarpali—crispy, golden bites made with Rich desi cow ghee and naturally sweet jaggery, all lovingly fried in pure groundnut cold-pressed oil"
Here’s a traditional recipe for making Shankarpali using desi cow ghee and jaggery, fried in groundnut cold-pressed oil:
Ingredients
2 cups Khapali Wheat flour
1/2 cup jaggery (grated)
1/4 cup desi cow ghee
1/4 teaspoon cardamom powder
1/4 teaspoon Saindhav salt
Water (as needed)
Groundnut cold-pressed oil (for frying)
Instructions
- Prepare the Jaggery Syrup
- Dissolve Jaggery In a small pan, add the grated jaggery and a little water. Heat it gently until the jaggery melts completely. Strain the syrup to remove any impurities, and let it cool slightly. - Make the Dough
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cardamom powder, and salt.
- Add Ghee: Add the desi cow ghee to the flour mixture and rub it between your palms until it resembles breadcrumbs.
- Incorporate Jaggery: Gradually add the warm jaggery syrup to the flour mixture. Mix well until it forms a soft dough. If the dough is too dry, add a little water as needed. - Roll and Cut
- Rest the Dough: Cover the dough with a damp cloth and let it rest for about 30 minutes.
- Roll Out: After resting, divide the dough into two portions. Roll out one portion into a 1/4-inch thick sheet on a lightly floured surface.
- Cut into Shapes:Use a knife or pizza cutter to cut the rolled dough into small squares or diamond shapes.
4. Fry the Shankarpali
- Heat Oil: In a deep frying pan, heat the groundnut cold-pressed oil on medium heat. Test the temperature by dropping a small piece of dough into the oil; it should sizzle and rise to the surface.
- Fry: Carefully add the cut pieces of Shankarpali to the hot oil, a few at a time. Fry until they turn golden brown, turning occasionally for even cooking.
- Drain: Use a slotted spoon to remove them from the oil and drain on paper towels to absorb excess oil.
