After completing my postgraduate degree in Agriculture (M.Sc. Agri), I had plenty of corporate job opportunities before me. However, sitting in an air-conditioned cabin doing a routine job just didn't speak to my heart. Having studied agriculture, I always had a deep desire to build something of my own—something deeply rooted, authentic, and genuinely beneficial to society.

Driven by this vision, we started a mushroom farming venture two years ago. While selling fresh mushrooms in the local market posed its challenges, we refused to give up. Instead, we adapted, processed them, and began crafting healthy, value-added byproducts like mushroom cookies and papads.

Discovering the Path to a Clean Food Revolution...

Interacting directly with customers at various food exhibitions opened our eyes to a massive shift in what people wanted. Post-pandemic, urban families had become deeply health-conscious. There was a surging demand for natural, jaggery-based alternatives to replace refined sugar.

Having some prior experience in baking, I decided to closely study the commercial biscuits available in the market. What I discovered was eye-opening. Most market cookies are packed with maida (refined flour), palm oil, heavy preservatives, and synthetic chemicals. Truly wholesome, 100% clean cookies were virtually non-existent.

That's when a single thought took root: We need to create a cookie so pure and clean that it stands completely unmatched in the market!

  • The Method: Heat a tablespoon of oil in a kadhai. Add mustard seeds, cumin, and a pinch of asafoetida (hing). Toss in a cup of sandge and fry them on medium heat until they turn a beautiful golden brown and release a roasted garlic-and-lentil aroma. Add water, cover with a lid, and let it simmer until the granules absorb the water and soften.
  • To Serve: Garnish with fresh coriander and serve piping hot with rustic Jowar or Bajra Bhakri, a slice of raw onion, and a lemon wedge.

2. Sukhe Sandge (Dry Side Dish)

If you want a quick, crunchy, and spicy accompaniment to your daily meal, make a dry stir-fry.

  • The Method: Shallow fry the sandge in oil until they are completely crunchy and cooked through. Toss them with a little extra finely chopped raw onion right at the end to give a beautiful texture contrast.
  • To Serve: Pair it as a side dish with simple Varan-Bhat (dal-rice) or Amti to add an instant burst of flavor and crunch.

3. Sandge Amti or Rassa (Thin Spicy Gravy)

A thinner, fiery gravy version that mimics traditional Maharashtrian non-veg curries in flavor profile.

  • The Method: Lightly roast the sandge. Prepare a gravy base using a roasted coconut-onion paste (Vatan), add the sandge, and let them cook in the boiling gravy until they swell up.
  • To Serve: This spicy rassa tastes heavenly when mixed with hot, steaming steamed rice.

4. Sandge Shengole / Khichdi Twist

  • The Method: When making a simple, comforting comforting moong dal khichdi, throw in a handful of lightly fried sandge into the pressure cooker along with the rice and lentils.
  • To Serve: The sandge absorb the moisture and become soft, savory flavor-bombs hidden inside the comforting khichdi. Top it with a dollop of pure A2 ghee.
