Although having originated in tropical Africa, Kodo Millet was domesticated in India about 3000 years ago.

Kodo Millet is high in protein (11%) and low in fat (4.2%). It is excellent for strengthening the nervous system because of high levels of lecithin.

Kodo Millet is rich in B vitamins, especially niacin, folic acid and B6.

It is also excellent for postmenopausal women suffering from signs of cardiovascular disease like high blood pressure and high cholesterol levels

How to Make

Millets can be used to prepare a variety of Indian dishes like Khichadi, Pulav, Upma etc. Foxtail Millet is traditionally used as a replacement for Rice. Wash the Foxtail Millet thoroughly a few times and leave to soak in water for 4-8 hours. Further they could be sprouted or used directly to make Idli / Dosa Batter etc. The pre-soaked / sprouted Foxtail millet can be dried and then milled to make flour. This millet flour can be added to regular atta to make Chapatis, Puris, Breads and Cookies.

Washing, Soaking, Sprouting of millets help in removing the anti-nutrients they contain and make them easy to digest.
