Here’s a traditional recipe for making chakali, inspired by grandma's methods:
Ingredients : 2 cups rice flour,1 cup besan (gram flour),1/4 cup urad dal flour (optional),2-3 tablespoons sesame seeds,1 teaspoon ajwain (carom seeds),1 teaspoon red chili powder (adjust to taste),1/2 teaspoon turmeric powder,Salt to taste,2-3 tablespoons butter or ghee (melted),Water(as needed for dough), Cold Pressed Groundnut Oil (for frying)
Instructions
1. Prepare the Dough:
- In a large mixing bowl, combine rice flour, besan, and urad dal flour.
- Add sesame seeds, ajwain, red chili powder, turmeric powder, and salt. Mix well.
- Pour in the melted butter or ghee and mix until crumbly.
- Gradually add water to form a smooth, soft dough. It should be pliable but not sticky.
2. Shape the Chakali:
- Use a chakali maker or a piping bag fitted with a star nozzle.
- Take a portion of dough and fill the chakali maker.
- On a greased surface or parchment paper, pipe spirals or concentric circles to form chakalis.
3. Fry the Chakali:
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully slide the shaped chakalis into the oil.
- Fry until golden brown and crispy, turning occasionally for even cooking.
- Remove with a slotted spoon and drain on paper towels.
4. Cool and Store:
- Allow the chakalis to cool completely before storing them in an airtight container.

- Ensure the oil is hot enough before frying to avoid soggy chakalis.
- Adjust the spices to your preference for a personalized touch.
- You can experiment with additional flavors like garlic or pepper for variation.
