Oldest evidence of Foxtail Millet is found along the ancient course of Yellow River in China. Although domesticated in China but it has been growing in India since ancient times.

Foxtail Millet is low in glycemic index and has high level of crude fibre. It is also hypolipidemic, that is, it helps decrease lipids in blood.

Amino acids present in Foxtail Millet are comparable to the soy protein concentrate.

How to Make

Millets can be used to prepare a variety of Indian dishes like Khichadi, Pulav, Upma etc. Foxtail Millet is traditionally used as a replacement for Rice. Wash the Foxtail Millet thoroughly a few times and leave to soak in water for 4-8 hours. Further they could be sprouted or used directly to make Idli / Dosa Batter etc. The pre-soaked / sprouted Foxtail millet can be dried and then milled to make flour. This millet flour can be added to regular atta to make Chapatis, Puris, Breads and Cookies.

Washing, Soaking, Sprouting of millets help in removing the anti-nutrients they contain and make them easy to digest.
