Ingredients

- 1 cup jowar flour (sorghum flour)
- 1 cup besan (gram flour)
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon cumin seeds
- Saindhav Salt (to taste)
- Water (as needed)
- Wooden pressed oil (for frying)

Instructions

 1. Prepare the Dough
- Mix Flours : In a large bowl, combine the jowar flour, besan, red chili powder, turmeric powder, ajwain, cumin seeds, and salt.
- Add Water : Gradually add water to the dry ingredients, mixing until you form a smooth and pliable dough. The dough should not be too soft or too hard; adjust with flour or water as needed.

2. Heat the Oil
- Prepare for Frying : In a deep frying pan or kadhai, heat enough wooden pressed oil on medium heat. Test the temperature by dropping a small piece of dough into the oil; it should sizzle and rise to the surface.

3. Shape the Sev
- Use a Sev Maker : Fill a sev maker or a piping bag fitted with a star nozzle with the dough.
- Fry the Sev : Press the dough into the hot oil, creating thin strands. Fry in small batches to avoid overcrowding. Fry until they turn golden brown and crispy.

4. Drain and Cool
- Remove from Oil : Use a slotted spoon to remove the sev from the oil and drain on paper towels to absorb excess oil.
- Cool Completely : Allow the sev to cool completely before storing.

5. Store

  1. Best before 90 days from manufacturing if unopened. Should be had fresh within 1 week once opened.
  2. Store in a cool, dry place away from direct sunlight. Once opened, store it in an airtight container.
